Eight Bells Rum

Eight Bells Rum is a barrel matured gold rum, distilled from Carribean sourced molasses in our direct fire pot stills and aged for over 3 years in bourbon whiskey barrels.  Eight Bells Rum has flavors of toasted spice and vanilla with a long, smooth finish reminiscent of caramel, oak, figs and dried cherries.  It is excellent sipped neat, or enjoyed in your favorite rum cocktail.

Here are a couple of cocktail recipes that we enjoy:


The Maine Old Fashioned

3 oz. Eight Bells Rum
1 tsp. maple syrup
3 dashes Coastal Root Coffee Bitters
1 slice of lemon zest

In an Old Fashioned glass, mix the maple syrup and bitters with a splash of rum until  well mixed, wring the zest over the glass and drop it on in there. add a cube or two of ice, now top it up with the remaining Eight Bells and get sipping!


Side Car

1 ½ oz. Eight Bells
1 ½ oz. Cointreau or your preferred triple sec
1 ½ oz. fresh lime juice

Throw it all together in a shaker with ice, give it a good shake and strain into a chilled cocktail glass.


Mai Tai

2 oz. Eight Bells
1 oz. Cointreau or your preferred triple sec
1 oz. fresh lime juice
½ oz. orgeat (almond syrup, it’s at the liquor store with the bitters)

Throw everything in a cocktail shaker with ice, shake the bejesus out of it, strain into an Old Fashioned glass (or tiki) filled with ice. If you’d like to garnish you can add a slice of lime, mint sprig, or a cherry.


Debaser (the Shaken Andalusia)

1 ½ oz. Eight Bells
½ oz. dry sherry
½ oz. brandy
2 dashes Angostura Bitters
Optional: sliced eyeball

Add all of the ingredients to a shaker with ice, press play on Pixies-Doolittle, go to town. Strain into a chilled cocktail glass and enjoy.
